- Salsa para el caldo de pozole rojo
- 5 chiles pasillas
- 4 chiles california/guajillo
- 5 chiles de árbol
- 1/2 cebolla blanca
- 3 dientes ajo
- Para cocer el pollo
- 3 piernas de pollo
- 1 pieza completa de pechuga de pollo
- 1 pollo grande entero
- 1 pieza tomate
- 1/4 cebolla
- 1 diente ajo
- 1/2 mazo de cilantro
- 1 pz de chile jalapeño

- Lavar y desinfectar todos los ingredientes por separado.
- Poner agua suficiente a hervor y agregar todos los ingredientes de la sección de para cocer el pollo y agregar 1 cubito de caldo de pollo.
- Cocer hasta que la carne del pollo se despegue de los huesos.
- Mientras picar las verduras para acompañar, el repollo finamente, los rábanos en rodajas, cebolla y cilantro igual finamente. Reservar.
- TIP: en mi casa nos gusta el picante por lo tanto hacemos una salsa de chile de árbol, pero esto es opcional.
- Sacar en un bol caldo hirviendo de donde se esta cociendo el pollo y agregar los ingredientes de la salsa para el caldo del pozole rojo, chiles, cebolla, ajo y dejar remojar por 20 minutos.
- Sacar las piezas de pollo y dejar enfriar. Reservar el caldo.
- Remover los tallos a los chiles y licuar con cebolla y ajo, agregar 1 litro del caldo de donde cocemos el pollo. Licuar.
- En otra olla ponemos 3 litros de agua, agregar 1 litro de caldo de pollo reservado y la salsa que hicimos con los chiles, agregamos el maíz precocido/nixtamal para pozole. Y cocer por media hora.
- Desmenuzar todo el pollo, poner los huesos en una bolsa para especias o de té y cerrar bien, agregamos al caldo todo, pollo y huesos.
- Dejar a hervor por media hora y agregar todas las especias, siempre rectificando la sal.
- TIP: El caldo de pollo es salado por lo mismo voy agregando los condimentos y pruebo para rectificar sabores, nunca agrego más de 3 cucharas.
- Cuando pase la media hora revisar si el nixtamal/maíz pozolero se encuentra completamente cocido, de ser así retira la bolsa de huesos y servir.
- Servir en un plato hondo y adornar con verduras picadas. Y gotas de limón.
