  1. Abrir el pescado en mariposa, limpiar con suficiente agua y dejar las escamas.
  2. Cortar el pimiento en julianas; el jitomate en rodajas; la cebolla en pluma y el chile en rodajas finas, reservar. Asar ligeramente las hojas de plátano, reservar.
  3. Moler el recado rojo con el jugo de naranja agria, colar y mezclar con aceite vegetal; adobar el pescado haciendo cortes en la piel para que penetre el adobo.
  4. Cubrir con los vegetales y envolver en hoja de plátano, reposar en frío durante 30 minutos.
  5. Cocer el pescado en el horno a 180ºC durante 25 minutos, o hasta que esté bien cocido; servir con xnipec (Ver receta en Cochinita Pibil), arroz blanco y frijoles colados (Ver receta).
