  1. 1 1/2 taza agua
  2. 250 g setas
  3. 1/4 pza cebolla blanca chica
  4. 1/2 cdita sal
  5. 1 diente ajo
  6. 1 pza jitomate saladete
  7. 125 g manteca vegetal
  8. 2 tazas harina de maíz
  9. 100 g queso fresco
  10. 1 cdita sal
  11. cantidad suficiente hojas de maíz
  12. Sorpresa
  13. al gusto queso asadero
  14. al gusto ate de membrillo

  1. Remojar en agua caliente las hojas de maíz
  2. En una olla pequeña colocar 1 1/2 taza de agua, las setas, la cebolla, sal y ajo.
  3. En otra olla o sartén fundir la manteca vegetal sin que hierva.
  4. En un recipiente grande (bowl) colocar el harina de maíz y añadir el caldo de cocción de las setas (colado). Mezclar para formar la masa. (si ya tienes masa de maíz 500g, no añadas caldo a menos que la sientas seca).
  5. Poco a poco agrega la manteca y amasa (con palote o con las manos). Añade la sal. Estará lista cuando hagas una bola en tus manos y tus manos queden limpias.
  6. Desmenuza el queso fresco e integralo en la masa.
  7. Sobre una tabla pica las setas, la cebolla y el jitomate, llévalo a la sartén/olla donde derretiste la manteca y sofríe, añade sal.
  8. Pon las hojas a escurrir. Toma las más pequeñas y corta tiras para amarrar los tamales.
  9. Ve preparando una vaporera (yo usé una pequeña, añadí 4 tazas de agua - 1L)
  10. Toma una hoja de maíz y con la
    parte de atrás de una cuchara de mesa untar 3/4 partes de hoja con la masa.
  11. Rellenar con las setas. Envolver y doblar. Usar una cintilla de hoja para cerrar el tamal.
  12. Colocarlos en la vaporera de manera vertical y cocerlos por una hora.
  13. Los dulces: rellenar con queso asadero y ate de membrillo. También puedes hacer unos de puro queso y son una delicia.
  14. Si te gusta el picante puedes guisar las setas con chile serrano o bien servir con una salsita. Para el recalentado usa un comal 😋
