Este pozole es muy diferente del que se prepara normalmente, debo decirles que esta es mi versión muy personal de este maravilloso platillo; para hacerlo necesitamos desde luego maíz cacahuazintle descabezado es el que se conoce como maíz pozolero, tenemos la ventaja de que en México lo venden ya descabezado e incluso lo venden en latas.

- 6 tomates verdes

- 1 chile poblano en rajas
- cebolla
- 1 diente ajo
- consomé en polvo o sal
- orégano

- Yo compré una bolsita de un kilo de maíz pozolero, se supone que ya viene cocido pero eso es sólo una verdad a medias porque hay que ponerlo a cocer, yo usé sólo la mitad de la bolsa o sea 1/2 kilo.
Lo lavamos y lo colocamos en la olla express - En una ollita ponemos a cocer 6 tomates verdes - de los de cáscara- un pedazo de cebolla y un diente de ajo y una vez cocidos los molemos en la licuadora junto con un chile poblano previamente asado pelado y hecho rajas y unas ramas de cilantro y los ponemos en la olla express con el maíz cacahuazintle, sazonamos con 2 cucharaditas de consomé en polvo o sal, una pizca de orégano y media cucharadita de comino. Tapamos la olla y la dejamos una vez que suba 10 minutos.
- En ese tiempo picamos una lechuga finita, picamos cebolla muy fino y la ponemos en diferentes trastecitos, en otro ponemos limones en mitades, si tenemos rábanos también los ponemos picados. Unas 3 tortillas se cortan en cuadritos y se doran en aceite, se escurren y se colocan en otro trastecito. Ya a la hora de servirlo se pone otro traste con aguacate cortado en cuadritos. Se puede poner otro trastecito con cilantro picado.Todo esto se pone en la mesa acompañando al pozole.

- Si se dan cuenta yo no le pongo pollo, se le puede poner pero yo lo prefiero vegetariano.
También se puede acompañar con un arroz a un lado
