- 90 gr mantequilla sin sal
- 200 gr arroz bomba
- 1.5 litros leche entera
- 1 rama canela
- La piel de un limón
- 200 gr azúcar

- Canela en polvo (para decorar)

- Comenzaremos preparando la base de nuestra tarta. Para ello trituramos las galletas en un procesador de alimentos (o dentro de una bolsa aplastándolas con un rodillo) hasta obtener una textura tipo arena. Derretimos la mantequilla en el microondas y se la incorporamos a las galletas, mezclamos bien.
- Ponemos papel de hornear en la base de nuestra tarta y echamos la mezcla de polvo de galletas + mantequilla. Extendemos bien por toda la base aplanándola con la ayuda de un vaso. Refrigeramos.
- A continuación preparamos el relleno. En un cazo ponemos agua (bastante), media rama de canela y media piel del limón. Calentamos a fuego medio hasta que empiece a hervir. A continuación añadimos el arroz y esperamos que vuelva a hervir. Dejamos hirviendo 10 minutos. Pasado este tiempo retiramos la media rama de canela y la piel del limón y escurrimos el arroz. Reservamos.
- Del litro y medio de leche sacamos un vaso, y el resto lo ponemos en otro cazo junto con la otra mitad de la rama de canela y la piel del limón. Calentamos a fuego medio hasta que empiece a hervir. Mientras, en el vaso de leche que teníamos reservado echamos los 2 sobres de cuajada y removemos muy bien hasta que no quede ningún grumo.
- Cuando la leche comience a hervir añadimos el arroz y el vaso de leche con la cuajada. Cocinamos entre 20-30 minutos sin dejar de remover, hasta que obtengamos una textura de arroz con leche.
- Por último, retiramos la canela y la piel de limón, sacamos el molde de la nevera y echamos el relleno de la tarta sobre la base de galletas. Damos unos golpecitos sobre la encimera para que se reparta bien por todo el molde.

- Dejamos que se atempere a temperatura ambiente y luego refrigeramos hasta la hora de servir (mínimo 3 horas, aunque esta mucho mejor de un día para otro).
- Antes de servir decoramos con canela en polvo por la superficie.
